Brewery Deep Dive

Hop Brothers Brewing: North Ridgeville's First Microbrewery Pours Craft Beer and a Full Menu

If you've driven Lorain Road through North Ridgeville and pulled into Hop Brothers Brewing for a pint and a meal, you know the place fills a gap. North Ridgeville had no microbrewery until 2021, when David Wittschen opened Hop Brothers at 32650 Lorain Rd. The space is big, the menu runs from pizza and wings to salmon and steaks, and the beer program has only gotten stronger since Gavin Rousek came on as head brewer in 2023. It's the kind of spot where West Side families and beer enthusiasts can both find something to like.

The Name and the Founding

Hop Brothers Brewing takes its name from the ingredient that defines so much of American craft beer. The brewery was founded in 2021 with what Wittschen described to the Morning Journal as "a simple mission: to bring great craft brews and tasty eats to North Ridgeville." Combining a passion for brewing with an entrepreneurial spirit, the goal was to build something special for the community, one sip and one bite at a time. North Ridgeville sits in Lorain County, west of Cleveland, and before Hop Brothers opened, residents had to drive elsewhere for a brewpub experience. The space on Lorain Road is large enough for a full taproom, restaurant, and outdoor seating, and it has become a gathering place for the area.

The Brewer: Gavin Rousek and the GABF Pedigree

In September 2023, Hop Brothers hired Gavin Rousek as head of brewery operations. Rousek is an Olmsted Township native who has been interested in brewing since he was young. He helped his family and friends make home-brewed beer and wine as a child, and before joining Hop Brothers he was part of a competitive brewing team that won five medals at the Great American Beer Festival and World Beer Cup, including two gold medals. Wittschen told the Morning Journal that Rousek "combines exceptional skill in the technical aspects of brewing with a wealth of passion and creativity," and that the team was excited to see what he would accomplish.

Rousek had been brewing at Hop Brothers for several months before the formal hire. He told the paper that the most fulfilling part of the job was "standing on the brewhouse deck and seeing people enjoy a product we've made here." He was eager to showcase everything he had learned and to create beers with notably distinct flavor profiles that stay true to style. When he came on, the food was already drawing strong reviews. Wittschen noted that they got "as much acclaim" for the food as for the beer at that point, and that the menu was "more than just bar food." Rousek's hire signaled that the brewery was doubling down on the beer side.

The Beer: Route 80, Sweets Cream Ale, and a Dozen Taps

The tap list rotates, but you'll typically find around twelve beers on draft. Route 80 West Coast IPA has become a flagship. It's hopped with Idaho 7, Amarillo, and Citra, pours a deep golden color, and sits at 7% ABV. On Untappd it has over 500 ratings and a 3.72. Victoriously Hazy, an imperial double New England IPA with tropical flavors and a smooth, creamy malt profile, clocks in at 8.1% and has drawn strong reviews. Sweets Cream Ale is brewed entirely with local ingredients from West Branch Malts & Distillery in Akron. It's smooth like a lager and crisp like an ale, and it has developed a following among drinkers who want something approachable without sacrificing character.

For something with a cause, Rainbow Red donates a portion of proceeds to Rainbow Babies and Children's Hospital. The 1813 Pale Ale pays homage to North Ridgeville's 210th anniversary as a township and is single-hopped with Idaho 7. King KoKonut is one of the more distinctive offerings, a coconut-forward beer that reviewers have called "wonderful." Kringle Bell Hop is a spiced holiday ale with cinnamon, ginger, honey, and vanilla. Shillelagh is a Russian imperial stout that has earned a 3.87 on Untappd. Werkstatt Bier is a traditional German pilsner, light and crushable with clean malt notes. Blood Brothers is a fruited IPA with blood orange, and Sunny & 60 is a hazy IPA with Galaxy and Nelson Sauvin hops. The White Stout uses lactose, cocoa nibs, and single-origin Guatemalan espresso from local roaster Black Key Coffee.

The brewery has over 100 beers in its catalog on Untappd, with a 3.7 rating across more than 9,000 check-ins. Flights let you sample the range. Beer to go is available in growlers and cans.

The Food: Pizza, Salmon, and More Than Bar Food

The menu was designed to go beyond typical brewery fare. Wittschen told the Morning Journal that they wanted to offer "a wealth of food," including pizza and salmon, and that the kitchen was built to meet a high standard. One reviewer on Restaurant Guru described the food as "nicely cooked" and highlighted Thai chicken, truffle fries, and pork sandwiches. Another called the mozzarella sticks the best they had had: handmade, big, gooey, and hot. The Prime Rib Wrap has developed a following. The Blackened Grouper pairs well with onion rings, and the Apple Crumble cheesecake has been recommended as a perfect ending. The bacon jam chicken with fries has drawn praise, and the kitchen offers burgers, wings, wraps, and hearty apps.

A detailed review on Restaurant Guru noted that the menu is "broad and approachable," with something for every palate. From burgers and wings to wraps and shareable apps, there is plenty to choose from. The space is described as "warm and welcoming, with a rustic feel accented by modern touches." The full kids' menu makes it a solid option for families. One patron wrote that after her son flipped his basket of wings onto the floor, the owner went above and beyond to make it right. That kind of attention shows up in the reviews.

The Space and Vibe: Paw-tio, Live Music, and a Gathering Place

Hop Brothers occupies a large building on Lorain Road. You have indoor tables, a covered patio for when the weather is iffy, and an outdoor Paw-tio that is dog-friendly. Live music sets up in the evening. The brewery offers tours, and the full bar means non-beer drinkers have options. They participate in the Cleveland Brewery Passport and are a Destination Cleveland partner, so they show up on the city's official tourism materials. One reviewer described it as "the kind of place that works for a casual lunch, a laid-back night out, or anything in between." The rustic-meets-modern interior and the variety of seating options give it flexibility. Families with kids, groups of friends, and solo visitors all find a fit. The staff has drawn consistent praise for being attentive and friendly.

What Patrons Say

The reviews tell a consistent story. On Restaurant Guru, a reviewer called Hop Brothers "a solid go-to" that "nails variety without feeling overwhelming." They highlighted the twelve beers on tap, the full bar, the broad menu, and the kids' menu. "Hop Brothers Brewing gets a lot right," they wrote, "great beer, solid food, and a space that feels inviting without trying too hard." Another guest had an "interesting time" on a Saturday night and called the Christmas bar "very festive." Their server, Cameron, was "a delight" and the food was "quite alright."

On MapQuest and Yelp, guests have praised the mozzarella sticks, the Prime Rib Wrap, the German pilsner, the Blackened Grouper, and the Apple Crumble cheesecake. One reviewer said the food and service were "spot on" and appreciated that the bartender checked in frequently. Another was glad they visited as part of the Cleveland Brewery Passport and noted the dog-friendly Paw-tio. A patron who tried the stout during the holidays said it "tastes richly" and that the place "definitely has the holiday spirit." On Untappd, the check-ins show people coming back for Route 80, Sweets Cream Ale, Shillelagh, and the rotating seasonals.

North Ridgeville and Lorain County

North Ridgeville sits in Lorain County, about twenty miles west of downtown Cleveland. Lorain Road runs through the heart of town, and Hop Brothers occupies a visible spot along that corridor. The city has grown steadily over the past decade, with new housing and retail filling in along the main thoroughfares. Before 2021, anyone in North Ridgeville who wanted to visit a brewpub had to drive to Lakewood, the Flats, or one of the eastern suburbs. Hop Brothers changed that. The brewery has become a destination for West Siders who want craft beer and a full meal without the drive, and the Cleveland Brewery Passport has brought in visitors from across the region. When someone asks where to get a good beer and a meal on the west side of Lorain County, Hop Brothers is now part of the answer.
